Aloo Anda ka salan

Shamsad ki recipe, punjabi style. This is what she makes at home for her family. Its the first time I ever had this dish in Pakistan.

Ingredients

  • 2-3 eggs
  • 3 small potatoes, diced into biggish pieces
  • 1 tomatoes
  • 1 onion
  • 2 green chillis
  • coriander, chopped

Spice

  • 1/2 tsp red chilli
  • 1/2 tsp salt
  • 1/4 tsp tumeric/haldi
  • 1/4 tsp cumin powder
  • 1/4 tsp coriander powder

Directions

  • blend onion, tomato and green chillis and add to hot oil
  • Add all the spices and fry till the oil seperates
  • Add potatoes and mix for 5-6 minutes
  • Crack in the eggs eggs and keep mixing for 3-4 minutes till eggs are cooked enough to not stick.
  • Add enough water to cover potatoes a little bit, once it starts boiling, then lower heat, cover with a lid for 10-15 minutes.

Serve with a bit of coriander and a pinch of garama masala on top.

Notes

The traditional anda aloo ka salan is more of a salan with boiled eggs floating in it. Never liked it heaps, this one is just plain tastier.
